RE: chili
Can't say I have a formal recipe. But I usually brown a couple pounds of ground beef with a bunch of onions, garlic, chili powder and cumin. I add a few cans of diced tomatoes, one small can tomato sauce, 2 cans of Brooks Hot and Spicy Chili Beans, a can of Dark Kidney Beans, a can of Light Kidney Beans and a Can of Black Beans. Then saute up a bunch of Red, Yellow & Green Peppers with some Jalapeno and other hot peppers and add that to the mix along with a beer. Cook it all down and add extra Chili Powder and Cumin while it cooks and until it gets the flavor I like. I also add a small pinch of Cinnamon and a spoon or two of brown sugar and usually also add some Ancho Chili Powder. When I'm really ambitious, I cube up some cut of beef and add it with the ground beef. No two batches are ever the same, but always good.

RE: chili
One time I cooked Pork Ribs in the crockpot seasoned with season salt, cracked pepper, emerils original seasoning, Hungarian paprika, even thyme and/or parsley flakes...garlic...
When it was done I took some out and set aside to make chili...shredded the pork and added it to the pot. It was SO good! Its always fun to take a break from ground beef in chili. I would love a great chicken chili recipe! Let me help you Save
